A new hidden cocktail bar is opening to the public on Friday.

Charlie Brown's is the latest addition to the Southside, tucked away up the stairs at 441 Victoria Road next to the Japanese-inspired sister restaurant Daku.

The neighbouring venues are independently owned by Paul Gillies, with general manager Lynsey Cameron and head bartender Elyse Von Ruinn taking the helm at the new bar.

The name is a nod to Quentin Tarantino's iconic film Kill Bill with easter eggs hidden for fans within the cocktail menu and decor.

Elyse, 29, said: "If you've seen Kill Bill, you know that the character we're referencing is the hospitality hero.

"He's doing his best, still working and trying to provide while everyone treats him a bit rubbish."

The tongue-in-cheek reference echoes the approachable atmosphere punters can expect in Charlie Brown's.

Elyse said: "We're really, really excited to open on Friday and for everyone to be able to come past.

"We've been inundated with messages from people saying they're going to come by and visit which is amazing news for us."

Serving up elevated drinks inspired by nostalgic flavours (like peanut butter and jelly), the intimate new lounge will have a rotating wine list and bartenders will be encouraging people to order their favourite classics as well.

Elyse and Lynsey, 34, each have over a decade of experience working in hospitality and previously managed a UK Top 50 Cocktail Bar.

With fellow bartender George Bowie, the trio hopes to create a nostalgic, inclusive atmosphere where people can come together and have fun.

After the initial rush of opening Charlie Brown's, the team hopes to engage with people from the Southside community for collaborations on drinks and events.

Elyse said: "Once we're open for a couple of weeks we're going to be introducing a 'community sips' cocktail.

"We'll be working with local businesses, local personalities, maybe even local bands, anybody that wants to get involved with us.

"Taking inspiration from them, we will make a drink for our cocktail specials menu and a percentage of the drink will go to a charity that they choose.

"The Southside is an amazing place to work because everyone is so supportive, and it really feels like you can be at home even just walking down the street.

"So we really wanted to capture that essence in our vibe and find a way to connect with everybody."

Surprise hospitality nights for industry workers will also be in the cards for the venue.

Charlie Brown's opens to the public at 4pm on Friday, July 28 for walk-ins only.

Daku is currently closed for a revamp and will be re-opening with an exciting new menu next week.
