300g whole wheat spaghetti
20 raw king prawns, de-veined
150g onion, finely sliced
1 red chilli, finely chopped
2 garlic cloves, crushed
4 tomatoes, diced
1 pkt tender stem broccoli
½ bag spinach
1 lemon, juice only
75ml olive oil
Method
1. Place on a pan of water to boil, season with salt and cook spaghetti for require time, around 12 minutes. Towards the end of cooking add in the broccoli
2. Heat the oil in a large frying pan and add in the king prawns, cook quickly for 2 minutes until they have turned pink, remove and place onto a plate for later
3. Add the onions into the pan and cook until slightly soft. Add in the chilli and garlic and continue to cook for a further two minutes.
4. Add in the tomatoes, spinach and return the prawns to the pan.
5. When pasta and broccoli are cooked, drain and add these into the pan and toss well. Add a little splash of water if looking a bit dry.
6. Squeeze in the lemon juice and season well with freshly ground black pepper and some salt.
7. Finish with some freshly chopped parsley and serve straight away onto warmed plates.
8. Serve and enjoy
