A new pop-up bar has opened near the COP26 conference in Glasgow. 

The late night venue in Finnieston, THERE HAS TO BE, is the product of a group of hospitality businesses raising awareness of food and drink sustainability.Glasgow Times:

In collaboration with Clyde Docks Preservation Initiative (CDPI), the limited edition bar will serve locally sourced food and eco-conscious drinks a stone's throw from the heart of the summit.

The temporary bar will be located at Mediterranean restaurant Alchemilla on Argyle Street. 

A spokesperson from Alchemilla said: “We’re busy making plans to reopen the restaurant next month, same chefs, new name, foods from a different continent. We’re really excited to announce everything soon.

"In the meantime, we’re glad that we can enable the vision for THERE HAS TO BE pop up to happen with their sustainable takeover. ”  

Working with popular local bars Chinaski's, The Parlour, Berkeley Suite and The Brunch Club, the pop up will minimise waste in ways such as using excess pineapple juices and limes to use in their drinks. Glasgow Times:

The cocktail menu features frozen margaritas, old fashioned and negronis, along with cocktails made with local sustainable brands such as Panther milk and oat milk brand Liquid oats. 

There will also be artisan, Neapolitan-inspired pizza to complement the drinks and the Berkeley Suite have organised local DJs to entertain guests.Glasgow Times:

Adam Strang from Cocktail Collective said: “We wanted to do something different to get the industry thinking about their carbon commitments and represent Glasgow hospitality.

"Sustainably conscious cocktails don’t need to be boring, if you stop and taste any of our cocktails, you’ll agree. We’re only open for a limited time, come and support us if you can.”

THERE HAS TO BE opens today from 4pm until 2am until Sunday November 14.
