Chocolate dessert pasta and a supersized pizza inspired by one of the Glasgow young team's favourite hangouts?

We would expect nothing less from the new venture by Gallus Street food, the uber-creative cooks who have exploded onto the food scene with their quirky creations since opening last year.

Now, chef Steven Gallagher, alongside business partners Andy Johnstone and Paul McGettigan, is taking on an altogether more Mediterranean theme.

Talking us through what to expect from Romana, Yoker's newest pizza and pasta joint Steven said: “It’s a new challenge for us.

“We’ve got so many different concepts that we want to explore, but Andy was keen to do Italian and let me put my own spin on it.

“Our pizzas are made in deep pans so they’re almost Detroit style, there aren't many people doing that in Glasgow.”

Romana opened last week on Kilbowie road and is, for now, operating on a takeaway only basis.

Although the team are serving up all kinds of authentic Italian fare like Arancini Salami or Meatballs in a hearty ragu, there's one particular dish with a Gallus twist that's really caught our eye.

Steven said: "We have a 16-inch pizza that we’ve named after the Four Corners in the city centre.

"It's huge, square and has four different types of topping.

"We haven't tried it yet, but what I really want to do is a special that’s inspired by all of the food places at the Four Corners so McDonald's, KFC, Tim Hortons and Pizza Hut style toppings.

"We’re just trying to have fun with it while we’re working."

Yoker locals, Steven and his team have even found a way to give back to their community while tackling food waste.

He said: “We’re only open on Thursdays and Sundays at the moment so at the end of the week we do a 'dough drop'.

“Dough goes out of date after about three days so there would be a lot of waste if we got rid of our leftovers.

“Instead what we decided to do was give some food away for free.

“Last week we went to a talk for people who struggle with their mental by Men's Health Matters in Drumchapel and handed out loads of our pizzas.

“We’re going to do that every week, just try and get them out to people who are in need or hungry.”

Although Romana has taken over the colourful West End unit once used for Gallus, fans of the original menu can still get their street food fix slightly further afield in Cambuslang and Clydebank

And when it comes to their specials? Team Gallus are still full of surprises.

Steven said: “Gallus is still going at our pub residencies and we have some really fun things on the go like our sampler boxes.

“We do one called The WAG (Wean at Grans) which is full of things like turkey dinosaur pizza and deep-fried mozzarella and chorizo jam sandwiches.

“It’s all a bit wacky - but people seem to enjoy it."
