Glaschu unveils new summer menu under new head chef

A popular Glasgow restaurant has unveiled a new summer menu and culinary direction under the leadership of its newly appointed head chef.

Conner Magee now leads the kitchen at Glaschu, part of The Superlative Collection, bringing his vision of modern Scottish dining to life with a fresh seasonal menu.

One of the standout offerings on the new menu is the signature Sharing Beef Wellington, crafted to encourage communal dining and reflect Conner’s belief in the importance of sharing great food experiences.

Other highlights include Buckfast Oysters and Barra’s Doughnuts, alongside a variety of dishes celebrating the best of Scottish ingredients.

Conner, who was born and raised in Govanhill, said: “Glasgow has an incredible food culture and a personality unlike anywhere else.

“My focus has always been on flavour and making every ingredient count.

“We want the menu to showcase exceptional Scottish produce while creating dishes that people genuinely want to come together and enjoy.

“The Sharing Beef Wellington is a great example of that.

“It’s a dish that’s designed to be shared and enjoyed around the table, while the wider menu reflects both the quality of Scotland’s ingredients and the character of Glasgow itself.”

Conner’s culinary journey has taken him through some of the UK’s most respected kitchens, including the Michelin-starred Aquavit London under Henrik Ritzén, Inver with Pam Brunton and Nottingham’s Alchemilla.

Influenced by the Nordic approach to seasonal, ingredient-led cooking, Conner focuses on flavour, simplicity and the quality of produce.

His appointment at Glaschu marks the latest step in a rapid rise through The Superlative Collection, where he began just three and a half years ago as chef de partie at Gōst.

He later became head chef at Maison by Glaschu before being appointed to lead Glaschu’s kitchen.

Conner is also working to foster a positive kitchen culture based on collaboration, respect and ongoing learning.

Under his leadership, Glaschu continues to build its reputation as a leading dining destination, offering a contemporary take on Scottish cuisine rooted in the heart of Glasgow.
