MARC Ferrier is the co-owner of The Thornwood and a partner in The Admiral and Gaga Bar and Kitchen.

One of the city’s first Art Deco pubs, The Thornwood was re-launched in March 2019 following a refurbishment that was sympathetic to its heritage.

It has since established in-demand outside seating, introduced new drinks and made their mac and cheese a coveted local pub delicacy.

As a venue, it has given the community a focus.

During the lockdown, the bar functioned as a shop for drinks and food while also offering deliveries. It was a way for the new team to meet their neighbours.

Now that they can operate as a proper local pub, these relationships have continued.

This summer they have been serving up pints and cocktails while people also come in for lunch or breakfast.

“Hospitality is just making people feel happy and that’s what we try to do every time,” Marc says.

“You can sit out the front in the sun, have a couple of pints, some food, a bit of social interaction, watch the world go by.

“We serve food for families that have young kids and dogs are welcome. It’s important that people feel comfortable and are looked after. Our team are lovely, they take pride in their work and that shows in the service.”

Marc sees travel as a major driving force behind ideas that are emerging in Glasgow bars.

“Now that destinations have opened again, you see how other places do things and you bring that back with you.

“I was away a few months ago with my wife in France and you pick up tiny hints of how to do it differently.

“Chefs are always innovating in that way and now the bartenders are too. They now have the equipment and the ingredients to do more than slice a lemon for drink preparation.

“Try a pineapple daiquiri or pink peppercorn margarita.

“You can see how places are adopting new ideas and things are getting better.”
